cinnameg cashbutter bars

To be perfectly honest, baking posts really are 89% better when there’s at least one enticing photo of the process or the outcome from the oven. Unfortunately for us all, I have neither. However, I do have this supercute photo of my second nephew, Ollie:

So. This recipe. I threw it together when we were still in the middle of packing up our place and needed to get rid of groceries and stuff. Also, baking helps me cope with stress so I threw it together at least as much for that reason. And lastly, I’m particularly proud of the fact that the name of this dish boasts a double portmanteau for the wordsmith in me. hollapraize.

 What you need: 

1 c cashew butter + 3/4 c sugar (brown or granulated should be fine) + 1/2 tsp cinnamon + 1/2 tsp nutmeg + 1tsp vanilla extract + 1 egg + a bucket of hope. ha.

What you do: 

Toss all your ingredients into a lovely glass bowl and blend it all together with a glorious wooden spoon. It really shouldn’t take you any longer than 8 minutes, and the oven should be preheated to 350 degrees. Once you’ve got a good sticky bar-dough going just smother it into a lovely glass square and let it bake for about 20 min.

Right out of the oven, these are pretty flavorful and I enjoyed a generous helping as a stand alone snack, but I also think it would be really good with vanilla ice cream and/or baked apples. Other than that, I think I might reduce the the amount of nutmeg down to 1/4 of a tsp; particuarly if you were going to season baked apples to have with it. Even though there’s no chocolate involved, I’m pretty sure this recipe is one I would keep in my regular baking rotation. Especially during autumn, which is right around the corner!!
